Garlic Parmesan Chicken Meatloaves ๐ง๐ง๐
Ingredients:
For the meatloaves:
1ยฝ lbs ground chicken
ยฝ cup breadcrumbs (panko preferred)
ยฝ cup grated Parmesan cheese
1 large egg
3 garlic cloves, minced
1 tsp Italian seasoning
ยฝ tsp salt
ยฝ tsp black pepper
2 tbsp fresh parsley, chopped
2 tbsp olive oil
ยฝ cup shredded mozzarella cheese
For the garlic butter glaze:
3 tbsp unsalted butter, melted
2 garlic cloves, minced
1 tbsp chopped parsley
2 tbsp grated Parmesan cheese
Instructions:
Preheat oven to 375ยฐF (190ยฐC). Lightly grease a baking dish or sheet pan.
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, pepper, parsley, and olive oil.
Mix until just combined. Do not overmix.
Shape mixture into small meatloaf portions and place in the baking dish.
Bake for 20 minutes.
Meanwhile, mix melted butter, garlic, parsley, and Parmesan together for the glaze.
Remove meatloaves from the oven and spoon garlic butter glaze over each one.
Top with shredded mozzarella cheese.
Return to oven and bake another 8โ10 minutes until the cheese is melted and golden, and the chicken is fully cooked.
Garnish with extra parsley and Parmesan before serving.
Perfect with mashed potatoes, pasta, or roasted vegetables ๐
Mongolian Ground Beef Noodles
Ingredients:
1 lb ground beef
5 cloves garlic, minced
โ cup brown sugar
ยผ cup beef broth
โ cup soy sauce
3 tablespoons hoisin sauce
ยฝ teaspoon ground ginger
ยฝ teaspoon ground black pepper
Pinch of red pepper flakes (optional for a spicy kick)
10 oz linguine
1 tablespoon cornstarch
2 tablespoons water
4 green onions, sliced for garnish
Directions:
Cook the Pasta:
Cook the linguine according to the package instructions in a large pot of boiling water. Drain and set aside.
Brown the Ground Beef:
In a large skillet over medium-high heat, brown the ground beef until no longer pink. Drain any excess fat.
Add Aromatics and Sauces:
Add minced garlic to the skillet with the beef and cook for about 1 minute until fragrant.
Pour in soy sauce, beef broth, brown sugar, hoisin sauce, ground ginger, black pepper, and red pepper flakes (if using). Stir well to combine.
Thicken the Sauce:
In a small bowl, mix cornstarch with cold water until smooth. Stir this mixture into the skillet with the beef and sauce.
Allow to simmer gently until the sauce thickens to your desired consistency.
Combine with Noodles:
Add the cooked linguine to the skillet with the beef and sauce. Toss together until the noodles are fully coated with the sauce.
Let them simmer together for a few minutes to absorb the flavors.
Garnish and Serve:
Sprinkle sliced green onions over the noodles.
