Easy Skillet Lasagna
This one-pan wonder gives you all the cheesy, saucy comfort of classic lasagna in about 30-35 minutes with way less cleanup. Perfect for weeknights!
Ingredients (serves 4-6)
1 lb (450g) ground beef or Italian sausage (or half and half)
1 small onion, diced
3-4 garlic cloves, minced
1 jar (24-28 oz) marinara sauce (or your favorite pasta sauce)
2 cups (475ml) beef or chicken broth (or water)
8-10 lasagna noodles, broken into 2-3 inch pieces (no-boil or regular both work)
1 tsp dried Italian seasoning
½ tsp red pepper flakes (optional)
Salt & black pepper to taste
1 cup ricotta cheese
1½ - 2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
Fresh basil or parsley for topping (optional)
Instructions
Brown the meat: In a large deep skillet (12-inch works best) over medium-high heat, cook the ground beef/sausage with the diced onion until browned, about 5-6 minutes. Drain excess fat if needed. Add garlic and cook 30-60 seconds more.
Build the sauce: Stir in the marinara sauce, broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a simmer.
Add the noodles: Stir in the broken lasagna noodles, making sure they're mostly submerged in the sauce. Cover and cook on medium-low for 12-15 minutes, stirring occasionally, until the noodles are tender. Add a splash more broth if it gets too dry.
Cheese time:
Dollop the ricotta cheese over the top in spoonfuls.
Sprinkle mozzarella and Parmesan evenly over everything.
Cover and cook 3-5 more minutes until the cheese is melted and gooey. (You can also broil for 2 minutes for extra golden bubbly cheese on top — just make sure your skillet is oven-safe.)
Rest and serve: Remove from heat and let it sit for 5 minutes. Top with fresh basil or parsley if desired.
Tips for Success
Make it lighter: Use ground turkey or chicken and low-fat ricotta.
Veggie boost: Add chopped spinach, zucchini, or bell peppers when cooking the meat.
No-boil noodles cook faster; regular ones might need a few extra minutes and more liquid.
