A long time ago, monks copied written works by hand. Words like “luve” and “wunder” were often hard to read because of all the straight up and down lines!
In certain words, the monks chose to change these U’s to O’s to make reading easier. Fast forward to today, many words with the sound /ŭ/ next to W, TH, M, N or V are spelled with an O!
That’s why we pronounce love as /l/ /ŭ/ /v/ but spell it with an O!
