My theory is that Nolan took the "Nobody" scene out on purpose to downplay Odysseus’ masculinity.
Part of the genius of the “Nobody” section is that Odysseus—in his all-consuming pride—can’t stand to know that Polyphemus thinks “nobody” defeated him. As he and his men are leaving the Cyclops' cave, he pompously declares that he, Odysseus, the sacker of cities, gouged out Polyphemus’s eye.
This prompts Polyphemus—armed now with the knowledge of Odysseus's identity—to pray to Poseidon that Odysseus and his men never return home.
Odysseus' own pride sets the story into motion and is effectively responsible for his own sufferings. But in Nolan's film, Odysseus is far from prideful and instead feels shame for his actions at Troy.
Including this scene would have changed the sort of Odysseus that Nolan wanted to create.
