Here's one of the ways I've been doing it lately! You just need a printer and some pens!
I print a doodle page with some scaffolding, then I see what emerges.

I get caught up overbuilding a single song-section a lot.
Using the playlist markers to sketch out the song structure on the timeline helps me, fwiw.
@producedbyasa big sound sir - I was watchin the meter in the bottom right - if that's your stereo spread, have you thought about panning those hats l/r of center using piano roll note pan?
