These pigment molecules change color with variations in pH of a plant's environment. Typical red, pink, orange, and yellow hues are associated with very acidic environments, while expression of purple hues are typically respective of neutral pH environments.

We've taken a particular interest to this plant from our current crop. This darker hue is due to a class of molecules known as Anthocyanins.
