Cheesy Beef Potato Burritos
Ingredients:
- 3 large potatoes, peeled and cubed
- 2 tablespoons olive oil

- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 lb ground beef
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried cilantro
- 1 teaspoon paprika
- 1/2 cup water
- 1 tablespoon minced garlic
- 5 burrito-size flour tortillas
- 1 cup nacho cheese sauce
- Taco sauce to taste
Instructions:
1. Prep and Season Potatoes: Peel, wash, and cut potatoes into small uniform cubes. In a large bowl, toss with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
2. Air Fry Potatoes: Cook seasoned potatoes in air fryer at 400°F for about 25 minutes, shaking the basket at least twice during cooking to ensure even browning and crispiness.
3. Cook Seasoned Beef: While potatoes cook, brown ground beef in a large skillet over medium-high heat. Season with salt, pepper, chili powder, cumin, dried cilantro, and paprika. Cook until no pink remains.
4. Finish the Beef: Drain excess grease if needed. Add minced garlic and cook for 30 seconds until fragrant. Add water and stir well. Keep on low heat until potatoes are ready.
5. Warm Nacho Cheese: Heat nacho cheese sauce in microwave or small saucepan until warm and smooth for easy spreading.
