Easy Pioneer Woman Cheeseburger Pie
Ingredients:
- 1 large yellow onion, diced (about 1 cup)
- 1 pound lean ground beef
- 1/2 teaspoon salt
- Freshly ground black pepper to taste
- Garlic powder to taste
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup Bisquick baking mix (or see alternative below)
- 1 cup whole milk
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions:
1. Prep the Oven and Pan: Heat your oven to 400°F and generously grease a 9-inch pie pan with butter or cooking spray to prevent sticking.
2. Cook the Beef Mixture: Heat a large skillet over medium heat. Add the diced onion and cook for about 3 minutes until it starts to soften. Add the ground beef and cook, breaking it up with a spoon, until completely browned. Drain any excess grease.
3. Season and Layer: Season the beef mixture with salt, pepper, and garlic powder to taste. Spread this mixture evenly in your prepared pie pan, then sprinkle the shredded cheese over the top.
4. Make the Batter: In a medium bowl, whisk together the Bisquick mix (or flour mixture), milk, and eggs until completely smooth with no lumps remaining.
5. Assemble and Bake: Pour the batter evenly over the beef and cheese layer in the pie pan. The batter will settle around the filling. Bake for 20-25 minutes until the top is golden brown and a knife inserted in the center comes out clean.
6. Rest and Serve: Let the pie cool for 5 minutes before cutting to help it set up properly. Cut into wedges and serve warm with your favorite burger toppings or sides.

There is a stretch of the Florida Big Bend where the Gulf stays waist deep for what feels like a mile, the bottom is all bright green grass, and for a few months every summer you are legally allowed to swim out and pick your own dinner up off the floor of the ocean.
Scalloping is not fishing.
There is no rod, no bait, no waiting.
You anchor over a grass flat, put on a mask, and float face down looking for a row of tiny blue eyes staring back at you from between the blades.
That is the part nobody warns you about.
Bay scallops have dozens of eyes, bright and iridescent, ringed around the edge of the shell, and once you learn to spot them you cannot stop seeing them.
You reach down, grab, drop it in the mesh bag on your hip, and go again.
Kids who cannot sit still for ten minutes on a boat will do this for 4 hours without complaining once.
The towns on that coast run on it.
Steinhatchee, Keaton Beach, Horseshoe Beach, Crystal River.
Little places where the boat ramp is the town square and every motel is full for the season and the whole economy is built around a shellfish the size of a silver dollar.
Then September comes, the season closes, the visitors leave, and the whole coast goes quiet again until next summer.

Sunday Dinner idea will be the perfect Meatballs
Meatballs:
2 slices white bread, torn into small pieces
1/2 cup whole milk
1/2 pound ground pork
1 pound ground beef
1 medium yellow onion, minced
4 garlic cloves, minced
2 large eggs
1/3 cup chopped fresh parsley
3 tablespoons Vinny R's Italian seasoning (Now at Walmart)
2 tablespoons salt
1 tablespoon pepper
Sauce:
3 tablespoons extra-virgin olive oil
1 cup yellow onion, minced
1 clove garlic, minced
Two 28-ounce cans of crushed tomatoes 2 tablespoons Vinny R's Italian seasoning
Salt and pepper, to taste
Sandwich:
Hoagie rolls
Provolone cheese slices
Mozzarella cheese, shredded Vinny R's Italian seasoning
