@armartin35 Could be the nibs. I’ve really liked the Ecuador ones from Meridian Cacao, and you need to pair them with quality vanilla to get classic “chocolate” flavor
@armartin35 People have asked me about using everclear or some other super high proof, but I don’t think it’s better because it increases the chance of tasting the alcohol from the tincture in the finished beverage.
@armartin35 I just use vodka. Not looking for any flavors from it, just using it as the solvent. Not worried about separating the oils. I keep the tinctures in the fridge so they will settle to the top, and then when I use the tincture I use a 3 ml dropper and pull tincture from under oil.

@BluehandMead Quality of judging feedback. Reading scoresheets that seemed accurate, both good and bad qualities. Describing accurate varietal honey character on entries even when it wasn’t specifically declared. Correctly calling out when I over did it on oak additions.
