@bigg_matthew As you wish, yes fresh off the boat is best but no one is able to take it from fishermen to consumer like us. You won't know the difference until you get it consistently.

@ChefGruel When you don’t see dark edges around the claws there’s a much higher chance they are firm-shell lobsters which have significantly less meat and are a non-sustainable lobster.
The store tanks are recirculating water, most of them are poorly maintained and the lobsters are weak and lose their flavor. Also, when you buy from a grocery store they are purchased from no one knows where, some will have meat and some will be empty shells. We only supply true Hardshells full of meat, every lobster, every time.
