Homemade Sweet Potato Pop Tarts with Cinnamon Glaze 🍠😋⁣

Ingredients:⁣
1 package of premade pie crust⁣
1 cup mashed sweet potatoes⁣
1/4 cup brown sugar⁣
1/2 teaspoon cinnamon⁣
1/4 teaspoon nutmeg⁣
1/4 teaspoon ground ginger ⁣
Pinch of ground cloves⁣
1/4 teaspoon vanilla extract⁣
2 teaspoons vanilla bean paste⁣
Egg wash (1 egg beaten with a bit of milk)⁣
⁣
Cinnamon Glaze:⁣
3 tablespoons melted butter⁣
1 cup powdered sugar⁣
1 tablespoon milk (adjust for desired thickness)⁣
1/2 teaspoon ground cinnamon⁣
⁣
Instructions:⁣
1. Preheat your oven to 350⁣
2. In a bowl, mix mashed sweet potatoes, brown sugar, spices, vanilla extract, and mix until well combined.⁣
3. Roll out the pie crust on a lightly floured surface. Cut it into rectangles into 8 rectangles. ⁣
4. Spoon a dollop of the sweet potato mixture onto half of the rectangles, leaving space around the edges. Poke holes into the other half with a fork. ⁣
5. Place poked pie crusts on top of each filled rectangle and press the edges with a fork to seal.⁣
6. Brush the top of each pop tart with the egg wash for a golden finish.⁣
7. Bake for 18-20 minutes or until golden brown.⁣
8. In a separate bowl, combine melted butter, powdered sugar, ground cinnamon, and milk, to make the cinnamon glaze.⁣
9. Once the pop tarts have cooled, drizzle the thick cinnamon glaze over the top.⁣
Optional: Top with toasted pecans before serving.⁣
