Не пише, че твоят сервитьор напусна миналата седмица, защото не му стигаше заплатата.
Не пише, че изхвърляш храна за стотици левове всеки месец, докато маржът ти изтънява до нула.
Не пише, че "обслужване на високо ниво" е шега, когато работиш с двама души на смяна, вместо с четирима.
Общината иска звезда на върха. Аз искам оцелели заведения в основата.
Защото звезда "Мишлен" храни туристически брошури и кметски речи. Не храни персонала ти. Не намалява разхищението. Не решава нищо от онова, което ти горѝ всяка вечер след затваряне.
Гастрономията на един град не се строи с инспектор от Париж. Строи се с всеки независим ресторант, който оцелява въпреки системата, не заради нея.

The eternal photographer’s dilemma: perfect the composition or catch the light before it dies? I chose the light. I had one brief moment to capture these gorgeous, harsh shadows before the sun moved on. Because this was shot on a DSLR with a kit lens, absolutely everything in the background is sharply in focus (hello, random palm frond merging with the neck of the oud). It’s a wonderfully messy, raw moment—and exactly the kind of shot that makes me physically yearn for the creamy background blur of a f/1.8 prime lens. Soon.

Digging out the archives and found some serious warmth. 🥰 Back in 2016, I produced an interactive culinary series called "One Life in Recipes." This particular masterpiece of an episode featured Chef Jun Yoshida and the legendary crew from The Happy Pig bringing absolute fire to the kitchen.
I stripped the colour from these to let the nostalgia take the wheel. Looking back at the beautifully imperfect, high-octane energy of this service is the ultimate reminder of exactly why I love photography: the power to freeze a raw, fleeting, and honest moment in time before it's gone.

When wandering the streets of Rome, it is easy to assume every statue belongs to antiquity. Yet, tucked into the heritage courtyard of Palazzo Mignanelli rests Igor Mitoraj’s "Sorgente del Centurione". A contemporary bronze monument that brilliantly masquerades as a weathered relic.
Streaked with a vivid blue-green patina by rain and time, the fragmented face embraces the beauty of the broken. It serves as a quiet echo of Stoic thought, reminding us that even the grandest human endeavours are fragile and fleeting.
It is a refined reminder that sometimes, the most intentional statements are made not by what is flawlessly preserved, but by the pieces left behind.
