@wilsonhlthcoach Smoke brisket at 275 degrees. Use water pan in chamber to keep humid air. Agree to pulling it sooner and resting longer. I let cool to about 160 by opening wrap. Then wrap in foil with some tallow and place in small cooler as long as you can.
