The American food system, viewed from a high enough altitude, is one of the strangest things any civilisation has ever done to itself.
A continent that grows more food per acre than any continent in history has produced, in less than a hundred years, a population in which 73% of adults are overweight or obese, 38% have prediabetes, 12% have type 2 diabetes, 50% have at least one chronic disease, and life expectancy is now below that of Cuba, Costa Rica, and the Czech Republic.
The cause is not mysterious. The country in 1900 was eating: pasture-raised beef and pork from regional farms, dairy from local herds, eggs from backyard chickens, vegetables from kitchen gardens, fruit from local orchards, fish from coastal and freshwater fisheries, and grain that had been ground locally and fermented overnight. The country in 2026 is eating: industrial seed oils, refined wheat treated with glyphosate, factory-farmed meat, ultra-processed packaged foods, high-fructose corn syrup, and a long tail of products engineered to be hyperpalatable.
The food infrastructure that produced the 1900 American diet still exists. The pasture is still in the high country. The dairyman is still milking forty cows. The farmer is still in his fields. The fishmonger is still landing fish on the dock.
The connection between the producer and the consumer was broken between 1955 and 2010 by the consolidation of the supply chain into approximately ten boardrooms.
The fix is on the periphery. The cousin in the country, the butcher who is still operating, the farmer's market on Saturday, the heritage turkey ordered in October, the cast iron skillet on the stove on a Wednesday at six. The fix has been there the whole time.

Senior officials in the Trump Administration tell Fox News that Joe Kent was “a known leaker” - and was cut out of intelligence briefings with President Trump months ago.
