One of the most typical dishes in the Bahamas is conch (pronounced "konk"), a type of sea snail that is a staple in the Bahamian diet. The most popular way to prepare conch is in a salad. To make a traditional Bahamian conch salad, you'll need:

4 large conchs, cleaned and chopped
1 large tomato, diced
1 large green bell pepper, diced
1 large red onion, diced
2 large celery stalks, diced
1 large cucumber, peeled and diced
1/2 cup fresh lime juice
1/2 cup fresh orange juice
1/2 cup olive oil
1/2 cup chopped fresh cilantro
1 Scotch bonnet pepper, seeded and minced (optional, for heat)
Salt and pepper to taste

Start by cleaning the conch. Remove the tough outer skin and cut off the hard foot. Rinse the conch well and chop it into small, bite-sized pieces.
In a large bowl, combine the chopped conch, diced tomato, green bell pepper, red onion, celery, and cucumber.
