Feijoada
Ingredients
1 lb (approximately 450g) black beans, soaked overnight and rinsed
1 lb special cuts of pork, diced into small pieces
1/2 lb mixed sausage or Kolbassa sausage, cut into segments
1/2 lb ground beef
1 onion, finely chopped
4 bay leaves
4 cloves garlic, minced
2 tablespoons cooking oil
1 can (about 6 oz) crushed tomatoes
1/2 carrot, finely chopped
2 tablespoons soy sauce
1 tablespoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
4-6 cups white rice, for serving
Instructions:
In a large pot, boil the soaked black beans in water until they become tender.
In another large pan, sauté the pork and sausage in cooking oil until browned, retaining the rendered fat.
Add chopped onions, bay leaves, garlic, and carrots to the pan, stir, and sauté until the vegetables become soft.
Incorporate the ground beef into the pan, cook until browned, and mix well with the other ingredients.
Pour in the crushed tomatoes, soy sauce, salt, black pepper, and red pepper flakes (if using) into the pan. Stir well and bring to a simmer.
Transfer the meat mixture to the pot of cooked black beans, simmer over low heat for approximately 1-2 hours or until the meat and black beans are tender.
Adjust the seasoning to your liking with salt and pepper.
Serve Feijoada hot, accompanied by white rice.
