Just a little controlled enzymatic browning in Painting 1 class today. Piercing the cell membranes of the banana allows the phenolic compounds to come in contact with enzymes like polyphenol oxidase, which turns the tiny puncture holes brown. #Spartanpride #UHSart #ArtAndScience
