Most of the tanks have now finished fermenting. Our work is still far from done in preparing the wines for bottling from next February. However, we can now admire their colouring and more importantly taste them as wine for the first time. We are thrilled with the 2020 vintage!

Following the harvest comes the very important procedure of fermentation. Our grapes are now beginning the next stage of their journey 🍷

The time of harvest is determined primarily by the ripeness of the grape as measured by sugar, acid and tannin levels with winemakers basing their decision to pick based on the style of wine they wish to produce 🍷
