Wagyu SHOULD be prepared medium to medium well. The fats won't render properly otherwise, and instead of melt-in-your-mouth, you'd instead get hard beef tallow instead.
Normally, meat gets tougher when it's cooked more, but A5 Wagyu, due to its fat content, will actually become softer, sorta like how brisket becomes soft well after temperatures that would make any other meat a brick(though, that's a gelatin --> collagen conversion so it's a bit different, but the point still stands that the tissue between proteins dissolves)
As for my take on the whole vegan chef thing--
I think there are two kinds of chefs, broadly speaking.
There are those who cook for their egos, popularized by the rise of Michelin Star celebrity chefs...
And those who understand what the meaning of the hospitality industry is.
I will cook anyone a steak well done to their liking, and I will cook the steak to well done while STILL being juicy, because you CAN do that.
Most people simply turn their nose up at it because it's a preconceived notion of what you're supposed to do with steak.
They want ketchup with that? Serve them the best damn ketchup they’ve ever had with that steak that changes their notion of what ketchup can be.
To be in hospitality is, simply put, to make them happy.
One of my greatest frustrations running Vite is that I become so disconnected from people. I post on socials, sure, I make content every so often-- But in my position, in what I have to do as a small business owner, I am forced into distance. I cannot, as a single person who is already overwhelmed with far more than a single person should ever do, extend the hospitality to every person that I know they deserve.
One day, I dream to have the means and funds to do a cafe, so that I can serve people in person, and be able to pay attention to the people in front of me, and to provide the unreasonable hospitality that I believe in.

Meats and veg both have their place, their flavors, their uses. One does not surpass the other, and are simply different, used in different ways, for different situations.
The chefs I served under had both ego and hospitality, or rather, the pride of their ego manifested in their hospitality. I made Michelin Star baby food, more than once, and Michelin Star dog food. I went to the store to get brand new, fresh produce and ingredients to make a completely vegan, allergen free version of a dish so it wouldn’t have the chance to touch anything that the allergens had.
To me, to be a chef, though I never reached the position, to be in the hospitality industry, is to make the person you’re serving happy.
Indeed, it is the very difficulty and novelty of actions that create the feeling of being cared for. If you optimize for your own comfort, your own desires, then I think, that is an ego driven move, and not bound to hospitality. Friction, and the lengths at which someone goes to make someone feel cared for, is indeed one of the greatest measures of hospitality.
Of course, there are times to show off and abandon hospitality, and other times to shed all ego, but I think I’ve rambled long enough about this, but that’s my opinion of it all on my 3 hours of sleep.
So, to summarize--
Go off, Kiara. Enjoy your steak however you like! It will be the pride of the chef, staked on their skill, to make it delicious, no matter what.
I am here with Wawa, i just cannot eat steak or whatever meat, if it is still so raw, i need to chew thousand of times to even eat it. Some People just need to accept, not everyone can eat meat like that, i tried and it just does not taste good for me, i need at least Medium. And sorry even if People are pro Chefs, you should People eat Meat how they want it to eat.
