Sharing a recipe my grandmother would always make when she had to make a dessert quickly, her Chocolate-Rum Soaked Coconut Squares
Coconut Squares (Classic Eastern European Cake)
Yields about 20 big squares
Ingredients
Batter
400 g flour
275 g sugar
2 eggs
3 tablespoons honey, melted
65β70 g margarine (or unsalted butter)
1 packet (12 g) baking powder
200 ml milk
Pinch of salt
Glaze (for dipping)
225 g margarine (or unsalted butter), cold
225 g powdered sugar, sifted
40 g cocoa powder
165 ml milk
100 ml rum *
200 g unsweetened desiccated coconut (for rolling)
Directions
Make the batter
Cream the margarine/butter, sugar, eggs, and melted honey until light and fluffy. Gradually add the milk while mixing. Mix the flour with the baking powder and pinch of salt, then add it gradually to the wet mixture until you have a smooth, soft batter.
Bake
Pour the batter evenly into a 35 Γ 25 cm (14 Γ 10 inch) baking pan lined with parchment paper. Bake at 180 Β°C / 350 Β°F (upper + lower heat, no fan) for 30β35 minutes, until golden. Test with a skewer. Let the cake cool in the pan for a few minutes, then flip it top-side down onto a cooling rack for 10 minutes (to make the top flat). Flip it back onto its bottom and let it cool completely.
Make the glaze
On medium heat, mix the milk and powdered sugar until the sugar dissolves and the mixture gets warm. Add the cocoa powder, mix well, and let it heat for a few minutes. Remove from heat, add the cold margarine/butter, and stir until the margarine/butter completely dissolves. Let the glaze cool slightly until it thickens to a good dipping consistency.
Make the squares
Once the cake is completely cool, trim the edges with a serrated knife, then cut into big, even squares about 5 x 5 cm (2 x 2 inches). Dip each square quickly into the lukewarm glaze with a fork, letting excess drip off. Roll generously in the desiccated coconut and place on a wire rack to set.
Serving
They can be eaten as soon as they are made, but for the best results, let the squares rest at least a few hours (ideally overnight) in the fridge. The squares should be slightly moist and tender. Take the squares out of the fridge 30β45 minutes before serving.
Notes
* The glaze is supposed to be alcoholic and very rum-forward, but the rum content can be reduced, replaced with rum aroma / extract (and milk) or just milk if you don't want any alcohol in the cake.
