The BEST Bolognese You'll Ever Make:
Ingredients:
1 medium yellow onion
1 celery stalk
1 carrot
1 lb ground beef (85/15)
4 cloves garlic, minced
2 cups beef broth
½ cup dry white wine
1 15oz can crushed tomatoes
3 tbsp tomato paste
3 tbsp balsamic vinegar
2 tsp dried oregano
½ tsp crushed red pepper (or more to taste)
1 bay leaf
1 cup whole milk
Salt and pepper to taste
Put the onion, celery and carrot in a food processor and pulse until finely chopped. If you don’t have a food processor, chop as fine as possible with a knife.
Heat 1 tbsp of oil on medium high heat on a large saucepan. Add the finely chopped vegetables with a pinch of salt, and cook until most of the moisture has cooked off (about 5-6 minutes).
Add a drop of more oil and add your garlic, then cook until fragrant (about 1 minute).
Move the vegetables to the side and add the ground beef with a pinch of salt. Cook until no longer pink inside. When the beef is ¾ of the way cooked, start mixing it in with the vegetables.
When the beef is fully cooked, add the white wine and cook until most of the liquid has evaporated.
Add the beef broth, crushed tomatoes, tomato paste, balsamic vinegar, oregano, crushed red pepper, bay leaf and a pinch of salt. Simmer until the sauce has thickened (about 1 hour).
When the sauce has thickened, add the milk and cook for about 1 more hour, then season with salt and pepper.
Cook the rigatoni for about ¾ of the package instructions, then finish cooking in the sauce with a splash of pasta water and freshly grated parmesan.
