In honor of the brave people of Iran fighting for basic human rights, I made a rendition of a classic stew, ghoresht gheimeh with an ascending tower of crispy potatoes. Its shape is inspired by the Freedom Tower (Meydan-e Azadi) in Tehran.

Cooking Persian food is a labor of love. It requires patience, detailed planning, and delicate balancing. It's an art and a science. It is an expression of love. A dance of color and beauty. A symphony of aroma with a falsetto of saffron.
