Most people still don’t realize this, but almost 90% of ice cream brands in India don’t actually use real milk or dairy. Instead, they rely heavily on palm oil and analog milk products.

The only exceptions that genuinely use real milk at scale are companies like Amul and MilkDairy, because they have a direct supply chain for fresh milk.

But it doesn’t stop at ice cream. Palm oil based analog milk is being widely used across products that Indians consume daily, such as:

- Mithai (sweets) during Diwali, Rakshabandhan, Holi, etc.

- Paneer, mawa/khoya, khoa-based sweets like barfi, peda, gulab jamun, kalakand.

- Milk-based desserts like kheer, rabri, phirni, kulfi, rasmalai, rasgulla.

- Everyday dairy items like tea whiteners, condensed milk substitutes, bakery creams, biscuits, chocolates, milk powders, and even packaged “paneer.”

The demand during festivals like Diwali or Rakshabandhan is so massive that it is practically impossible for sweet shop owners or even big brands to meet it using original milk. That’s why analog paneer and analog mawa dominate the market.

In fact, I personally know of a case where a very prominent brand had to secretly dump analog paneer and mawa into a river and settle with authorities for ₹2 crore to prevent the news from going public.

The truth is simple:

If you are living in 2025 and see an infinite supply of milk-based products on shelves at cheap prices, you should doubt their authenticity. It’s practically impossible to produce that much genuine milk. @foodpharmer2
