@reniemck I just got the biggest laugh from apple support "When you turn off text replacement in Pages, any text replacements set up in Settings on your device still apply to Pages." So if you take out the sugar from your coffee, your coffee will still have sugar in it.
@reniemck So I am guessing you have tried when you're in a program and typing a message, go to the menu bar and choose "Edit > Substitutions > Show Substitutions > Text Replacement" and deselect Text Replacement.
