@ClintFiore Best brisket I have ever smoked was wagyu. With that said, there have been 5 more that came out too fatty. I think it is luck of the draw with any given wagyu brisket. Stick with Prime as the price point isn’t worth the risk.
@Storage_Venture Ask how long he thinks the job will take him. Then ask for his billable manhour rate. Sometimes you can get there through a legitimate buy-out instead of a beat up session.

For a development project, a friend needed an easement from one of the large railroads and she charged a young woman in her office with getting it.
One can only imagine the brick wall she was tasked to negotiate with and the relentlessness required to get an agreement.
But a year later it was done.
The easement was obtained - on favorable terms - but with the requirement, in writing, that the young woman (named in the agreement!) was never allowed to call the railroad office again.

I rarely do it anymore without a deadline for termination agreed upon at the onset. A hard deadline allows you to part amicably. Your business model would also need to support temp, unskilled labor.
