The first known account of sisig was from Kapampangan dictionary back in 1732 by Diego Bergaño, a Spanish missionary who served as the parish priest for Mexico, Pampanga at the time.
Sisig was derived from the word manyisig, a Kapampángan term for "snack to something sour".
Sisig is not only meat, it can be fruits and vegetables. Sisig during the early times were guava and green or unripe papaya. It is considered as salad at that time as it is eaten with salt, pepper, garlic, and vinegar.
Modern day sisig came about during the time when Americans were still stationed in Clark Airbase. Filipinos noticed that the commisaries who are incharged of food throw away unused pig heads and jowls in the garbage. Locals who noticed what the Americans are doing see it as wasting the edible parts of the pig. So they offered to purchase the unwanted portions at a very cheap price. What they did is they boil the meat and added the needed condiments like salt, pepper, and vinegar to make the first sisig out of meat.
The most famous version of sisig was the recipe of Lucia Cunanan, well known as Aling Lucing. She retained the traditional elements of Kapampangan sisig, like the meat and souring agents, but the meat was grilled, added chicken liver, and served it on a hot plate which defined the perfectly made sisig.

Betute was derived from batotay, meaning sausage, making Betuteng Tugak literally means "frog sausage" as the frog is stuffed with minced frog meat or sometimes pork.
Frogs were a common sight in rice paddies. In early days when farmers were totally depended on rainwater as their primary irrigator of their rice fields, their children will gamely catch the frogs while the elders are busy planting in the fields. Eventually, this simple game of the children became a tradition of Kapampangan families during the rainy season as they catch frogs for own consumption or for selling.
