Tonight's maker project, since my son is in Boston and there are too many bananas:
Low carb banana bread, no recipe: 2 bananas, butter, oil, 5 eggs; lots of unblanched almond flour, baking pdr, erythritol. One loaf pan, 350F 1h
I'd put vanilla and cinnamon in next time.
Tonight's dinner is high protein Japanese rice, chicken and cashews in oyster sauce with onions and two colors of summer squashes.
And my son got me a custard boba. Oops.
tex/mex corn chowder, @mediumcarb: one large diced onion, a bit of oil to brown, ginger/garlic pastes, two cans creamed corn, a bit of wine to wash out the cans, a few T vinegar, a can of Ro-Tel tomatoes, three large diced jalapenos -- black pepper, chalula and scallions to top.
Tacos nopales, many good and varied recipes on the net. Cactus doesn't bite back when you're eating, only as you trim the paddles!

You can make these vegan, and add protein of choice. I use low carb whole wheat tortillas.

Hummos onigiri - with low GI Japanese rice, hummos and a seaweed wrapper -- is a great snack. Add a bit of chicken if you like.

My favorite medium-carb milkshake -- a pint or so of unsweetened chocolate almond milk, and a ripe banana. You could swear it had a lot more sugar and cream than is there.
Apply immersion blender and drink nearly guilt free.
