المصانع عشان تخمر الحليب وتصنع الزبادي تستخدم شيء اسمه (Starter culture)، وهو عبارة عن بكتيريا حية تنضاف وتحدد المنتج وش يكون...
بالزبادي العادي مثلاً، تنضاف سلالتين من بكتيريا حمض اللاكتيك (LAB) تشتغل مع بعض بتآزر ، وهي:
Streptococcus thermophilus و Lactobacillus bulgaricus

هذه العملية في علم ميكروبيولوجيا الأغذية تسمى (Back Slopping)، وهي ببساطة إعادة استخدام جزء من منتج نجح تخميره كبادئ عشان ينقلوا البكتيريا الحية و النشطة ويخمروا دفعة جديد��✨️

لكن السؤال⁉️...
أجدادنا زمان كانوا يسووا الزبادي بالبيت وبأعلى كفاءة، ومن غير ما يكون عندهم معمل أو Starter معزول!
مجرد كانوا يجيبوا الحليب الدافي ويحطوا عليه ملعقة أو علبة زبادي جاهزة من المرة اللي راحت كبادئ !
