I hated cooking eggs when I switched from non stick to cast iron pans They would always stick and never came out good. Well once I learned how to actually use the pan eggs came out better than ever and this is my preferred way to cook them. How to cook eggs in a cast iron skillet without sticking, follow these steps: 1. **Preheat the Pan**: Heat the cast iron skillet over low to medium heat for a few minutes. This allows the pan to evenly distribute heat. 2. **Add Oil or Butter**: Once the pan is hot, add a small amount of oil or butter. Swirl it around to coat the bottom and sides of the pan. This helps create a non-stick surface. 3. **Use Fresh Eggs**: Fresh eggs tend to stick less than older ones. 4. **Control the Heat**: Maintain a moderate, even heat. Eggs can quickly stick if the pan is too hot. 5. **Crack Eggs Gently**: Crack the eggs gently and close to the pan's surface to avoid dropping them from a height, which can cause them to break or spread too thinly. 6. **Avoid Overcrowding**: Don't overcrowd the pan; leave enough space between eggs. This helps them cook evenly and prevents sticking. 7. **Lid or Cover**: If you prefer your eggs with runny yolks, you can cover the pan with a lid for the last minute of cooking to help the top of the eggs set. 8. **Use a Spatula**: When it's time to flip or remove the eggs, use a flat spatula. Gently slide it under the eggs to prevent sticking. 9. **Season After Cooking**: Adding salt to eggs before cooking can make them release moisture and potentially stick. Season your eggs after cooking.

For busy mornings you can prep some egg muffins the night before. I like making bacon egg and cheddar version but you can sub your choice of meat or cheese. Start with cooking 12 slices of bacon. My preferred method is the air fryer

If you have eggs, cheese, and waffle maker you have chaffles. A chaffle is low carb high protein bread substitute that helps me with my sandwich cravings. Super simple to make and versatile
