A great question! This would be much more difficult had IHOP not made "IHOP" an official alternative to the full name the original acronym stands for. I think because of that, IHOPs is still proper.
A thought that occurred while listening to this @ModernMuck episode: since the grammatically correct pluralization of the restaurant is International Houses of Pancakes, would the acronym's pluralization be IHsOP instead of IHOPs? 🤔
