@chef_john1 Oh I love making this it’s one of my favourites ! The only way I’d eat eggplant as a child - there’s so many Filipino recipes that are amazing - we make crab so nice it’s called ginataan which is a way of cooking where we stew/boil in coconut milk.

@chef_john1 When I can’t find any of the ingredients I just use normal tomato puree , and I add ketchup and a table spoon of condensed milk .

Oh and you’ll need some nice melty cheese as well !

@chef_john1 I’ve done with with those big tomatoes- I boiled them for a minute, peeled them and marinated in soy, mirin, and nori.
Worked surprisingly well … it wasn’t perfect but it was nice
