Make big batches of pesto ahead of time and freeze them so you can make quick weeknight meals! Last night, we combined carrot top pesto with pasta, shrimp, tomatoes, beet greens, and collard greens. It only took 15-20 minutes!
@ChristiWhip The top is melted fresh mozzarella and underneath are chicken breasts. They're in a fresh tomato garlic fennel sauce/broth with dandelion greens, all from a local farm :) I'm not sure what to call it but it was pretty tasty!
