In my opinion the greatest Dragon ever put to film is Smaug from the Hobbit franchise by WetaFX. It is the most real looking and feeling Dragon I have ever seen.
The incredible team at Weta spent a lot of time iterating and developing the character to make it what it is in the final film, even changing his design after the first film was released with a small snippet of Smaug in his previous form (they went back and re-rendered that snippet for the digital release of the first film to keep it consistent). He was changed from a 4-legged Dragon to his final form which is technically a Wyvern.
He was voice acted and given reference performance capture by Benedict Cumberbatch which proved to be helpful for the animators at Weta.
I have never worked on a Dragon before but it is definitely on my wish-list of creatures to work on one day as they are my favourite fantasy creatures.
I highly recommend taking a look at how he was made in the below links, it is truly inspirational the level of detail and craftsmanship that went into making him.
