@hoshibaba Freeze drying is freezing the coffee concentrate at -50F, which can then be ground into particles of any size. These particles are then placed into a high vacuum chamber, where the ice water is removed through sublimation, leaving only the coffee crystals. 2/2
@hoshibaba Spray drying is spraying coffee concentrate into very hot air (300C), evaporating the water, leaving powdered beads of coffee. The beads are agglomerated to a coarse structure by wetting the surface, clustering them together, and then drying the newly sized particles. 1/2
