In its natural state, the rhizome is covered with a beige skin that resembles that of ginger. To obtain the spice, the rhizome is first boiled, then peeled, dried and powdered.
CINNAMON what to remember !!
Cinnamon does not come from a fruit or a root, but from the bark of a tree native to Sri Lanka (Ceylin) or China: the cinnamon tree. It comes from bark of Cinnamon tree branches stripped of their outer part.
As it dries, the bark forms thin strips that roll on themselves, thus creating "pipes"
It has long been used to treat colds, nausea and menstrual pain. Cinnamon is a remedy for diabetes and digestive disorders.

Yellow Pepper (also known as scotch bonnet). It might be obvious but trust me the yellow pepper has altogether a different fragrance and a different smell than the rest.
Number two is Ginger. It just give that extra lift especially when added to Ndole ⤵️
