This lower fat roasted beets with blue cheese was quick and delish! Spray beets with avocado oil, season, and roast for a half hour at 425. Top with fresh a chopped herbs and reduced-fat blue cheese. #healthyrecipes#healthylifestyle
Dessert for a light breakfast here! Just a bit of this new Baked Lemon Ricotta Cheese from #traderjoes was delish on my morning Kashi waffle! Add a drizzle of raw honey and handful of blueberries to top it off🍯😋
THE MOST FUN WE HAD EATING VEGGIES! 3-Steps: Spray. Season. Roast. Eat right off the stalk! 👉Spray stalk w avo oil, season, 👉put on oven rack, 👉and roast at 425 for 25 min. I added a sprinkling of grated Parm. Serve the stalk and let everyone slice off their own Brussels🍴
SHEET PAN TURKEY VEGGIE BOWLS: 👉Spray a sheet pan w avo oil and place ground turkey in the pan w veggies. Spray w avo oil and top w seasonings. 👉Roast at 425 for 30 min 👉Shred turkey and top on whole grains, along with roasted veggies 👉Drizzle w tahini & fig balsamic vinegar
BAKED CHEESY CAULI “BREAD” STICKS (approx. 210 cal): Mix 1 cup riced cauliflower + 3/4 cup liquid egg whites + 1/4 cup red fat mozz. Spread on parchment paper lined pan. Bake at 375 for 20-30 mins. Top with seasonings. Slice & enjoy! Dip in marinara sauce for approx 40cal.

TRADER JOE’S MATCHA GREEN TEA NOODLES: Matcha? Had to try! Loved them. I added EVOO, tomatoes, scallions, & sesame seeds which was a delicious combo! Sodium alert (720mg) so be sure to pair with low sodium ingredients - Or, mix 1/2 portion with more veggies and protein!

WATERMELON & LEMONADE POPCORN?! I was super curious, yet skeptical about these flavors, and I needed to give them a try… They were good! Reminds me of kettle corn with a hint of fruitiness. For 110 cals and 4g fiber in 3 cups, it’s a great option when you’re craving a snack.
TATER TOT ALTERNATIVE: These plant based broccoli and purple carrot bites were a yummy alternative to traditional tots. The “crumbs” gave it a nice crunch and they were easy to bake in my toaster oven.
