@samirsaran For instance - even in the North-South tech linkage - a tech-enabled food innovator from the Global North like Artic Warriors (https://t.co/dYgdVVhNmv) has far more in common with @OITable of India than with Whole Foods/Amazon.
You must try #amaranth flour if you haven't! Also known as Chaulai, Rajgira & Ramdana, amaranth is one of the most nutritious superfoods. Amaranth flour can be mixed with wheat flour to cook chapattis and added to cakes, cookies & breads, and it lends an earthy flavour to them.

#Perilla seeds, also known as wild sesame seeds grow in the northeastern states of India. We got these seeds high in #omega3 fatty acid on Nagaland trip where they are called Akini. White, grey, brown & dark brown in colour, perilla seeds are usually used after roasting/grinding.
Kudos to @AndazDelhi for their new restaurant ‘Soul Pantry‘! Glad to be their partners.
"Instead of using refined flours, they use #native grains like Barley, Ragi, #Amarnath and #Buckwheat which are sourced directly from the #farmers via @OITable."

#Pahadi Navrangi dal is a colourful & nutritious mix of lentil varieties from the hills. Navrang means '9 colours' and this dal mix is supposed to have 9 lentil varieties of different colours. Well-balanced in nutrition and flavour, this #indigenous dal takes less time to cook!
During #Ramadan fasts, #blackrice and other #wholegrains should be eaten as they are complex carbohydrates that provide a slow, stable and sustainable release of energy. Also, it replenishes the body with essential fibers and minerals after fasting!

Know your #farmers: Meet Uma Devi, a woman farmer from Kanda village in Tehri Garhwal district of Uttarakhand. She grows a number of rajma varieties by #organicfarming. In the meeting we had with her and her fellow farmers, she was a great listener smiling silently all the while.
'Bamboo blooms once in 36 years only. After the season, the bamboo groves die out. The locals used to clean up the bottom of the bamboo grove and collect the bamboo flowers falling down. The flowers are milled and the husk is removed to take #bamboorice.'

#Amaranth laddoo & more sweet treats for #diabetics!
'The pseudo-cereal amaranth has strengthening & anti-inflammatory properties. It belongs to the same family as quinoa but only better as it's native to India. It is a good source of plant-based #protein'
