@dublin_damo There are only 4/5 weeks of the year when I question my life choices ha ha ha. The consecutive week's of high 30s do get to you. Work keeps me busy in July but come August you do just get sick of it. Save to get away to the mountains or up Galicia for a few weeks of resbite.

@SevillaTapas It ended up being a home cook take on salmon encroute. Lovely Mercado encarnación salmón poached in milk beforehand, on before being wrapped on a bed of creamed spinach with feta, Gouda and fresh dill. Served with roasted veg and potatoes 😁
