3. Salmon En Croute. I served it with sautéed, sliced, cooked new potatoes and asparagus. I had shortcrust pastry to use up, but it’s nice with puff or filo. There was enough left to eat cold.
1. Salmon En Croute. Mix 200g cream cheese, tablespoon of fresh thyme, handful of chopped parsley. I used frozen spinach, about 10 portions, defrosted and drained thoroughly. Added to the rest of the mix with one egg yolk, salt and pepper. Place salmon on pastry then top with mix
2. Salmon En Croute. Cover the salmon and cream cheese topping with another sheet of pastry, sealing the edges well. Make a diamond pattern and then egg wash. Bake in a 180° fan for about 35 mins, until golden brown. Make a hollandaise sauce or any other creamy one you like
2. Turkish potato salad. Shred a robust lettuce. I used Dolce Romana. Add grated carrot, red onion, spring onion, parsley and the cold chopped potatoes. Mix well, add dressing and stir. Hearty crispy salad with a tangy spicy dressing. One to try 😋
1. Turkish Potato Salad and steak. Beautiful dressing for a nice change. Mix 3 tblsp olive oil, juice of half a lemon, tsp of salt, twist of pepper, tsp of chilli flakes and 2 tsp sumac. Boil waxy potatoes in their skins, cool, peel and chop.

Didn’t grow as much veg this year, but what we have is being picked daily, for each meal. Not really had any gluts
1. Sausages in chilli and cranberry sauce. Put the sausages and wedges of onion in a foil lined dish. Mix together 150ml sweet chilli sauce, 2tblsp cranberry sauce, 1tblsp each soy sauce, brown sugar an lime juice. Mix well and add about 50ml fresh orange juice
1. Jambalaya. I always have bits and pieces of veg etc. left midweek. Was gonna make broth with the ham stock! Sauté red pepper, courgette, onion, celery, green beans and chorizo in rapeseed oil, until soft. Season. Add ham, a good tblsp of Cajun seasoning and garlic. Stir well
2. Jambalaya. Add a tin of tomatoes, cup of rice and three cups of ham stock. Place a lid on. Lower heat, when rice is al dente, add fresh prawns. Continue to cook for another few minutes until prawns are cooked.
5. Oxtail Soup. Serve with crusty bread and butter. Very rich. It’s the first time I’ve used an OXO red wine concentrated pot and the results were pleasing. Takes a bit of effort, but satisfying! Enjoy! 😋
1. Oxtail soup. Brown oxtails in a little oil. Place in slow cooker, sprinkle with flour. Sauté carrots, onion and celery in the same pan. I had 300ml of frozen homemade beef stock. Add that with bay leaf, thyme and peppercorns, red wine stock pot. Bring to the boil
4. Oxtail Soup. Remove meat from oxtail, watch out for gristle and sinew. You can shred by hand, but I pulsed it in a blender. It yields a good 2 cups. Add this to the soup and bring to the boil. Skim off any foam. Add a tsp of white pepper, check seasoning, simmer for 10 mins

2. Barley Patties. They take about four minutes each side. Serve with rocket and tomato salsa. Filling and nutritious light bite. Very creamy with lovely melting cheese. Great way with leftovers
1. Barley Patties. Using the rest of the barley shown in last recipe, add mozzarella, Parmesan and an egg. Bind together using flour, if the mixture is too wet. Shape and breadcrumb then open freeze for 45 mins. I fried one in oil and left the rest to freeze completely.
4. Add the cooked barley and vegetables and a handful of olives. Add a little lemon juice and Tabasco sauce. Cook gently for about 5 mins. Everything goes creamy and unctuous. Serve with sour cream or Greek yoghurt. Really lovely, hearty and healthy dish. Please try 😋😊
1. Barley ‘risotto’. Firstly I prepared the barley because I’m going to make arancini style patties with it too. You can even eat it on its own with added herbs and seasoning! Slice a leek, celery, carrot and a couple of cabbage leaves. Season and add a tsp of honey.
3. I used it to make a ‘risotto’. I have used barley and made it exactly the same as using arborio rice, but it lacked creaminess, hence cooking it first. Slice chorizo with peppers, courgette and mushrooms gently sauté with oil and butter until soft. Add Italian herbs, season.
