Last night we celebrated Diwali with family and friends, old and new. It was a beautiful evening commemorating the triumph of light over darkness, as well as the triumph of knowledge and wisdom over ignorance. And for many of us, it was a wonderful salve for all the anxiety we’ve been feeling, especially as we face this week ahead. We hope and prayed for light and wisdom to prevail on Tuesday and whatever lies ahead, that we as a country have the strength to face it. Om Shanti.

The talented musicians that you see and hear have become an extension of our family after playing in our home year after year. Happy Diwali!! Putting this up again because I know many of you will be making sweets for your family today and through the weekend. Here’s a simple recipe that only takes three ingredients: sugar, ghee, and besan flour.

Use Indian besan flour, not regular chickpea flour, because they’re not the same. You can find these ingredients at any Indian supermarket—and it’s important that they’re of the highest quality! With only three ingredients, there’s nowhere to hide, so the freshness of the ghee and the quality of the besan flour make all the difference. You’ll need to be patient and keep stirring to reach the right consistency, which means never leaving the stove!

Don’t be discouraged if it doesn’t turn out with the exact texture you want the first time. Though I’ve seen this being made since childhood, when I was developing my recipe for "Padma’s All American" (out Nov 5, 2025), I had to make it a couple of times AND have my work checked by my aunties over Zoom.

Here are the ingredient amounts you’ll need:

2 cups sugar
1 1/4 cups besan flour
1 1/2 cups melted ghee

Use this recipe as a template to make different flavor variations on this wrap. You could sprinkle chile crisp and some chopped bok choy, or you could add some black beans and salsa macha and give it a latin twist. It's a great way to repurpose any stir fry or vegetable dishes left in the fridge! You could also do sundried tomato paste, arugula and shaved parmesan. The possibilities are endless!!
