The One Thing AI Can’t Automate

A barista in Amsterdam has a secret. It’s not his $20,000 espresso machine or his rare Brazilian beans. It’s the way he sprays a single drop of water on the grounds before brewing. ‘It wakes up the flavors,’ he says. No sensor can measure it. No AI can replicate it. And that’s why his tiny café has a line out the door while the industrialized place next door still promotes free WiFi to keep customers.

We’re deploying AI agents into our workflows and giving them one goal: Optimize. But optimization doesn’t account for the spray of water. It doesn’t understand the pride in the barista’s eyes or the smell of the shop. And so, bit by bit, we’re erasing what makes us unique.
The best things in life and business resist automation. They’re the things that can’t be scaled, copied, or measured but make all the difference.
