Eyal Shani calls himself the godfather of Israeli cuisine, and after one night at his new Miami room you stop arguing with him. Naked Tomato opened inside Moxy South Beach on Washington Avenue, and the man behind Miznon, HaSalon and Michelin-starred Shmoné brought every ounce of his theater with him. Hummus whipped by hand at the table. A tomahawk carved in front of the room over a tomato base diced live. Mezze stacked across communal tables, skewers off open flame, whole roasted produce, cocktails poured like the clock broke. Israeli roadside grill energy meeting South Beach at full volume. The tomato has always been his obsession. Now it has a Miami Beach address.

There is a phase in every man’s life where everyone he respects thinks he is making a mistake.

Tuesday lunch at a beach club, ocean three feet from the table, nobody on my calendar until I decide. Slow build. On purpose. Against decent advice from people who meant well. The work compounds quietly while everyone else is still talking.

Miami does not hand out 20-year runs.
