We missed @MeatlessMonday yesterday so we are having Meatless Tuesday! (Of course any night is perfect for a meatless meal) Creamy Spinach Pasta Alfredo from our first cookbook! Spinach, Parmesan, heavy cream and garlic with fusilli. Never gets old!
Happy @MeatlessMonday everyone! Tonight it’s Black Bean and Corn Tacos with a dollop of guacamole on top. We sauté lots of minced red onion with cumin, chili powder and garlic, add beans and frozen corn. Place cheese and bean mixture on tortilla and broil! That’s it!
