Finally feel like I made a great Brisket. Injected Waygu Tallow, added a water pan and wrapped in butcher paper after 4 hours. Cookeed 4 hours @ 225 then 6 hours @ 200. It was a prime brisket. If I could guarantee the same results every time I would do more often.
