Theory:

Lola was genuinely interested in dating Loki, but once she heard rumors of him, she denied him without ever asking him directly why he did what he did.

She saw him as dangerous and fled the wedding from Loki AND Big Mom and now lives freely looking for her husband.

My guess is that this is a misunderstanding. Lola is usually the one who proposes, but in this scene, it was Loki who proposed... Loki doesn't really seem like the type to do that, based on what we've seen of him so far...
