👩🏻: Now that you've established a unique identity for each branch to a certain degree, what do you think the future challenges will be in maintaining this? How do you plan to sustain the exclusivity and local authenticity of each area?
🐰: I think the main challenge for a dessert brand is competition, as new brands are constantly emerging. To maintain our position, we have to adapt to current trends and environment.
The brand needs to stay creative and trendy without sacrificing customer experience or touchpoints. We can't stay still. We always need to monitor incoming trends, see what flavors or products customers are interested in, and adapt those to fit our brand's identity and flavors.
👩🏻: So, if I understand correctly, the idea is to observe what flavors customers want and use that insight to develop new products beyond location-exclusive flavors?
🐰: Yes, that's why we regularly launch seasonal menus and NPD (New Product Development). For example, during the current matcha trend, Souri naturally participated. We created new matcha combinations that other brands hadn't done yet.
It's a two-way effort: “Capturing trends while Leading them”. Merging these two aspects helps make our brand unique so customers choose us first. 🔥
