@PetersonGIS You lose some server goodies like automated back ups etc. We had a major production AGOL service completely brick - unable to even overwrite, so I suggest periodically snapshoting and downloading backups.

As a practitioner, I second not overlooking total the cognitive /technical load it takes to solve a problem. I and many users will trade a lot of performance for ease of use.
