Why does the church call it the Sacrament of "Matrimony" and not the Sacrament of "Marriage"?

Because "Matrimony" comes from the Latin "Matri" [mother] and "mony" [hood]. The ceremony then is not about two people really loving each other but two joining who are open to children.
