It wasn't just about Sanji trying to take Zoro's place. He couldn't accept his reason for sacrificing himself.
Sanji tells Zoro he still has a dream to achieve and says they can just find another cook. He wants to protect his crew and is loyal to Luffy, but he does so believing his own life and dreams matter less than everyone else's.
Zoro is also willing to die for Luffy but his sacrifice comes from the responsibility and loyalty he feels towards his captain. When he fails to protect Luffy from Kuma he takes responsibility for it and offers his own life in exchange for Luffy's. His self demanding pushes him to carry that burden without making excuses because he believes it's his responsibility.
Zoro can be incredibly hard on himself but he won't accept Sanji devaluing his own life to justify his sacrifice.
Little details like this show the kind of bond they share. They may argue all the time but they understand and respect each other.
