Before the potato ever reached Ireland, the Irish were a cattle people, through and through. Wealth was counted in cows. The grandest of the old epics is a war fought over the theft of a prize bull. And the daily food, from the pagan Celts down to the chieftains who fought the English, was overwhelmingly what they called the white foods: milk fresh and soured, buttermilk, curds young and old, whey drunk as a sour refreshment, and above all butter, made every which way, even buried and aged in the bogs.

A visitor in 1690 marvelled that the Irish took their milk twenty different ways and liked it best when it was sourest. Beef was the winter food, the older cattle salted down when the grass failed. It was a diet built on the backs of the herds, on green country made for grazing, and it had fed the island in roughly that shape for well over a thousand years.

Then came conquest, and conquest rewrote the menu. Under English landlords and an export trade, Ireland was turned into a farm that fed somewhere else. Beef, butter and grain flowed out to England off the best land, while the native poor were squeezed onto smaller and smaller plots of the worst. On a scrap of bad ground a family could not run cattle, but it could grow one thing in enough quantity to live on, and that was the potato. So the people of milk and beef became, within a few generations, the most potato-dependent population in Europe.

In 1845 the crop took a blight and turned to black slime in the earth. Over the next years about a million died of hunger and fever, and a million more fled the country. And the cruellest detail, the one that should never be left out, is that all through the famine the beef, the butter, the grain kept rolling out of Irish ports under guard, bound for England, past the mouths of the dying.

The cattle never left the island. They had simply stopped belonging to the people who tended them. Sever a nation from its own food, set it down on a single crop chosen for it by somebody else, and you have already built the catastrophe. All that remains is to add the date.
